This Apple Coleslaw is delightful! With a subtle sweet flavor and plenty of crunch, you'll love mixing up this simple coleslaw for an easy side salad or a pass around dish at a potluck.

coleslaw mix

apple
cored and sliced

mayonnaise

apple cider vinegar
Instructions
Add coleslaw mix to a big salad bowl. (You can either shred the carrots and cabbage in a food processor or use a pre-made mix from the grocery store.)
Wash the apples and peel them, if desired. Cut them into slices.
Shred the apple slices in a food processor fitted with a steel blade. Add them to the bowl of coleslaw mix. Toss to combine everything.
Next, measure out 2/3 cup of mayo in a small bowl and add in 1 Tablespoon of apple cider vinegar. Whisk together.
Pour dressing over coleslaw and toss everything together. Taste coleslaw and add any seasonings to taste. Now it's ready to serve!

Notes
You can shred the apples with a food processor or box grater
If desired, you can add sugar to this coleslaw to make it sweeter
