Ingredients

extra-virgin olive oil
Salt and pepper to taste
Instructions
Preheat the oven to 200F. Line 2 baking sheets with parchment paper.
Peel the beets and slice them in uniformly thin 1/8-inch slices (the thinner you can slice them, the crispier the chips will be).
Put the beet slices in a bowl and toss with olive oil to coat.
Put the beet slices on the baking sheets in a single layer, so they are not touching.
Put the baking sheets in the oven and bake the beet chips for 2 hours.
Take the beet chips out of the oven and sprinkle with salt and pepper. Enjoy!
