Yummy beef teriyaki made in minutes! You'll love the flavors of this easy dinner. With soy sauce, mirin, rice vinegar, and brown sugar, it's a tasty dinner that the whole family will enjoy.
Add rice or white vinegar, soy sauce, mirin, and brown sugar to a mixing bowl or measuring cup. Whisk to combine into a sauce.
Pour half of sauce over 1 lb of chopped beef in a bowl and mix to coat the meat in the sauce.
Heat a nonstick pan to high. Add the beef and cook until heated through, stirring every minute.
Meanwhile, add cornstarch to remaining sauce in mixing bowl. Whisk to combine.
Once beef is just done (about 6 minutes), add remaining teriyaki sauce to pan. Mix to coat meat in sauce. Keep stirring and cook for another 2 minutes, or until sauce has thickened. Be careful that sauce does not burn. Reduce heat if this starts to happen.
When dish is done, turn off the heat and move the teriyaki beef to a serving plate.

After you coat the beef in marinade, you can cook it right away or leave in marinade for about 20 minutes (refrigerated) to add even more flavor
Cooking with oil is optional if you use an nonstick pan
An easy way to check if beef is done is to cut a piece in half and check for amount of pink in meat. Cook to desired doneness
