Caribbean Jerk Chicken Stir Fry Recipe With Vegetables
Caribbean Jerk Chicken Stir Fry is a flavorful and spicy dish packed with vibrant vegetables and tender marinated chicken. The combination of jerk spices, lime juice, and jalapeño brings a taste of Jamaica to your table. Perfect served over rice, this dish is a quick, healthy, and exotic meal option.
Mix Caribbean Jerk seasoning, sugar, minced jalapeño, and lime juice in a large bowl.
Rub chicken pieces with the seasoning mixture until fully coated. Use rubber gloves for protection.
Marinate chicken in a plastic zipper bag overnight in the fridge, or for 30 minutes at room temperature for quicker preparation.
Heat 1/2 tbsp of oil in a large non-stick frying pan over medium-high heat. Add onions, zucchini, and bell peppers. Stir-fry for 5 minutes until tender. Season with salt and pepper, then remove from pan.
Add the remaining 1/2 tbsp of oil to the pan and stir-fry the marinated chicken for 5 minutes, or until fully cooked and no longer pink in the center.
Return the cooked vegetables to the pan with the chicken and stir-fry for 1 minute to combine flavors.
Remove from heat and serve hot over rice or as desired.
