This Carrot Soufflé makes an absolutely delightful side dish or healthy dessert. With just a few ingredients, you can make a smooth and sweet soufflé that will be a big hit.
Prep a 2 Qt baking dish with nonstick spray or butter, set aside.
Microwave or boil the carrots to soften them. To microwave them, add carrots to a microwave-safe bowl and pour in 1/4 of a cup of water. Cover the bowl with a microwave-safe plate and heat for 6 minutes.
After the cooking time is up, carefully remove the top plate with oven mitts or a dish towel and check the carrots. They should easily mash with a fork. If not, replace plate and cook for another minute or two.
Once carrots are softened, use a spoon to move them from the bowl to the food processor.
Add butter, eggs, and vanilla on top. Puree for about 10 seconds, just to mix everything up a bit.
Next add flour, sugar, salt, and baking powder. Puree until fully blended and smooth.
Pour mixture into the prepared 2 qt baking dish.
Bake for 45 minutes, then check doneness by sticking a toothpick in the center of the dish. If the toothpick comes out clean, then soufflé is done.
If soufflé is not cooked through, heat for another 5-10 minutes.
Remove soufflé from oven and serve.

Microwaves operate differently. You might need to adjust the time for softening the carrots dependent on how fast your microwave heats them up.
When adding the carrots to the food processor, be sure to leave the excess water in the bowl.
Any shape baking pan can be used for this recipe, as long as it can hold 2 qts
