Who needs Chinese takeout when you can whip up this delicious Chicken Fried Rice at home? This quick and easy recipe is perfect for weeknight dinners, using simple ingredients to create a flavorful dish that's sure to become a family favorite. With tender chicken, mixed vegetables, and perfectly seasoned rice, it’s an ideal way to use up leftover rice!
Heat 1/2 tbsp of oil in a large non-stick frying pan over medium-high heat.
Add the vegetables and cook, stirring periodically, for 5 minutes or until tender. Sprinkle with 1/4 tsp salt and transfer to a bowl.
In the same pan, add another 1/2 tbsp of oil. Add the chopped chicken pieces and cook, stirring occasionally, until no longer pink in the center (about 7 minutes). Sprinkle with 1/2 tsp of salt and remove from the pan into a bowl.
Add the remaining 3 tbsp of oil to the frying pan. Add the rice and stir until all the rice is coated with oil.
Push the rice to the sides of the pan to expose the center. Crack the eggs into the center and scramble them until fully cooked.
Drizzle soy sauce over the rice and stir well to combine. Add the cooked chicken and vegetables back to the pan, mixing everything thoroughly.
Cook for an additional 3 minutes, stirring frequently, until all ingredients are well combined and heated through.
Notes
Using leftover rice (at least a day old) results in a better texture for fried rice compared to freshly cooked rice.
