This low carb and protein packed simple Chinese Tomato Egg Stir Fry is full of flavor, comes together in just minutes, and is super affordable to make!
Heat some oil over high heat on the stovetop in a large frying pan. Then add the chopped tomatoes.
Once the oil begins to sizzle move the tomatoes around the pan and then reduce the heat to medium-high. Now, cook them for about 5 minutes or until soft, stirring them every minute.
Add the eggs to the tomatoes. You can crack them right into the frying pan. Next, add the sliced green onions. Then break up the eggs with a spatula and mix everything together.
Season the egg mixture with a bit of soy sauce, black pepper, and garlic powder. Now, continue to cook and stir the eggs over medium-high until they set, which will take about a minute or less.
When the eggs are set, transfer the dish to a plate and enjoy!
