Preheat your oven to 350 and line a baking sheet with parchment paper.
Mix together softened butter and sugar in a mixing bowl.
Add egg and vanilla and mix until combined.
Pour in the flour, then sprinkle in baking soda and salt. Mix everything together.
Next add the chocolate chips. If it helps, use your hands to mix all the ingredients into a smooth dough.
Scoop up the dough with a spoon and use your hands to roll into golfball-sized cookie balls. Place on parchment paper. Flatten the cookie dough balls slightly with your hands to get a good shape. This recipe makes about 12 cookies.
Bake for 12 minutes. The cookies may look underdone in the middle, but they will solidify as they cool. They also will not look "brown", like traditional chocolate chip cookies, as they do not contain brown sugar.
Cool the cookies for 30 minutes before serving.

To soften the butter, leave out on the counter for about 20-30 minutes or microwave on defrost for 1 1/2 minutes
Sprinkle the dry ingredients over the flour to better distribute and mix together
