Instructions
Open up the instant pot and pour in white rice. Add sugar, salt, coconut milk, and water.
Close the lid of the instant pot and flip the valve to sealed.
Cook at high pressure for 4 minutes, then let the steam naturally release for another 10 minutes. Finally, turn the valve to do a quick release.
Once steam is all released, open the lid of the instant pot. Give rice a stir.
Scoop rice out of instant pot into a serving bowl.

Notes
Use lite (low-fat) coconut milk for this recipe. Full-fat coconut milk can cause some instant pots to show a "burn" notification
If you rinse your rice during prep, it will absorb some of the water, so you only need to use a 1/4 cup of water for cooking
Be sure to mix up the coconut rice when it's done cooking, to blend the liquids into the rice
Sugar is optional here, but does add flavor
