1Tbspavocado oilor olive oil or veggie oil (only need 1 tsp for frying pan)
1/2cupoatmeal
1/2cupcottage cheese
2eggs
1/2tspbaking powder
1/8tspsalt
Instructions
Preheat griddle to 375 degrees or heat a frying pan to medium high heat.
Drizzle 1 Tablespoon of avocado oil on the griddle. With a pastry brush, coat the griddle surface in an even layer of oil.
Add to a blender: 1/2 cup of oatmeal, 1/2 cup of cottage cheese, 2 eggs, 1/2 teaspoon of baking powder, and an 1/8 teaspoon of salt. Blend ingredients for about 30 seconds or until you have a smooth batter.
Pour pancake batter onto the hot griddle. You should have enough batter for about 8 pancakes. If there is any left, add a little bit of batter to any smaller pancakes to make them all as evenly sized as possible.
Cook for about 3 minutes, then carefully flip the pancakes over. Cook pancakes for another 2 minutes or until they are golden brown on both sides.
Use a spatula to move the pancakes from the griddle to a serving plate.
