You'll love this Cucumber Chickpea Salad for a refreshing side dish or main course salad that comes together in a snap! And the simple lemon juice and olive oil dressing is perfect on top.
Start by draining and rinsing a can of chickpeas. Add prepped chickpeas to a big salad bowl.
Now it's time to wash and chop the cucumber. Cut it in half, lengthwise; then cut further into strips. Finally, chop into pieces. Add the cucumber to the bowl.
Cut a red onion in half. Slice off the stem and cut into strips. Then dice the onion into small pieces. Add onion to the salad bowl.
Next chop the leaves off of a bunch of parsley. Discard stems. Run knife through leaves a few times until they are chopped into pieces. Add parsley to the bowl.
Slice a lemon in half and squeeze the juice of one half into a mug or small bowl. Pour in olive oil. Whisk to combine into a dressing. Pour over salad ingredients.
