16ozegg whitesstore-bought carton or separate 14 eggs
1/2tsphot saucemore or less to taste
1/2tspsalt
1/4tspgarlic powder
1/2cupcottage cheese
1/2cupshredded cheddar cheese
1green onionchopped
1/2cupspinachchopped
1/2red bell pepperfinely chopped
Instructions
First preheat the oven to 350 degrees.
Use a nonstick muffin tin and spray it with nonstick cooking spray. This is necessary so the eggs don't stick to the tin during cooking.
Pour egg whites into a mixing bowl.
Add hot sauce and seasonings. Whisk to combine.
Add the cottage cheese and shredded cheese to the bowl. Mix again.
Add chopped vegetables (we used green onions, bell pepper, and spinach) to the egg mixture and stir again.
Now use a small measuring cup or large spoon to add the egg mixture evenly to all the muffin cups. For best results, try to get an even amount of toppings (vegetables) in each cup.
Bake for 25 minutes.
Allow to cool and remove each with a spoon. Enjoy them now or store in the fridge (up to 5 days) or freezer for later.
