This recipe for French Toast Without Eggs is a life-saver when you're craving french toast but don't have any eggs. You just need bread, milk, and butter for this simple breakfast. Cornstarch adds creaminess to the dish and you won't even miss the eggs.
Heat a griddle to 375 degrees or a frying pan to medium high heat.
Add 3/4 cup of milk to a mixing bowl. Sprinkle in 1 Tablespoon of corn starch. Stir with a fork to blend together.
Sprinkle in cinnamon and vanilla. Stir to mix it all up.
Prep griddle by coating with butter (other options listed below). Add 2 Tablespoons to a griddle or 1 Tablespoon to a frying pan. Use a spatula to move the melted butter all over the cooking surface.
Dip both sides of each slice of bread in the milk mixture and place on hot griddle.
Cook for 4 minutes or until bread is brown on the bottom.
Carefully flip the french toast (bread will be softer without eggs) and cook for another 3 minutes or until it is browned on both sides. Keep an eye on this dish while it's cooking. If it starts to burn, turn down the heat to medium.
When french toast is done, move it to a serving plate. Turn off the griddle.

Notes
Any kind of milk works here. You can use traditional cow's milk or a nondairy option
For cooking the french toast, you can use butter, vegetable oil, or coconut oil
You can omit the cornstarch if you are out, but this will result in slightly less creamy french toast
