Fried Brown Rice is a delicious side dish or base for a filling dinner. Add vegetables and fried egg for plenty of protein and fiber. You'll love this flavorful rice.
Add vegetables. Cook for about 5 minutes, stirring every minute, or until the vegetables are tender. If they start to burn, turn the heat down to medium.
Using a heat-safe utensil, clear a spot in the middle of the ingredients. Add the oil and garlic.
Wait for a few seconds, or until you smell the garlic cooking. Then add the brown rice and toss everything together with a spatula.
Once again, make some space in the middle of the pan. Crack two eggs into the spot. Turn the heat back to high and scramble it together with the rice. Cook for about 2 minutes or until the eggs are done.
Add 2 Tablespoons of soy sauce (or more or less to taste) and mix everything together. Taste the fried rice and season as needed.
Once it's done, turn off the heat and move the rice from the pan to a serving bowl.

You can use fresh or frozen vegetables in this dish. If frozen, defrost in the microwave first or cook from frozen in the skillet
Use as many vegetables as you want. You can decide the ratio of veggies to rice
Cooking with oil is optional. You may not need it if you use a nonstick pan.
