Lay out six slices of bread on the parchment paper.
Spread softened butter on top, then flip slices of bread upside down. (Buttered sides should be on outside of sandwich)
Next add two slices of cheese to each.
Top each with another bread slice and coat the outside of that slice with the softened butter.
Make sure the sandwich layers are lined up and then place in the oven.
Bake for 8 minutes, but keep an eye on them towards the end of the cooking time, as oven can vary. No need to flip the sandwiches during cooking time, the oven toasts both sides up.
Remove cookie sheet from oven and allow sandwiches to cool for a few minutes before serving.

Notes
An easy way to soften butter is to leave it out on the countertop until it reaches room temperature. Softened butter is much easier to spread on bread slices.
You can use softened butter for this recipe, or brush on melted butter or oil
For perfectly equal toasting on both sides, you may prefer to flip the grilled cheeses halfway through cooking time
If you wish to make even more grilled cheese sandwiches, simply double-up the ingredients and fill a second baking sheet
