This one-pan skillet dinner combines ground turkey and potatoes for a simple, hearty meal. The turkey is browned to perfection, while the potatoes are crispy on the outside and tender on the inside. Heat a large non-stick frying pan over high heat and add 1 tbsp of olive oil.
Add chopped onions and ground turkey to the pan at the same time and cook, stirring often, until the turkey is fully cooked and no longer pink (about 10 minutes).
While the turkey and onions cook, peel and dice the potatoes into small cubes.
Once the turkey is cooked through, remove it from the pan and set aside.
Add another tablespoon of olive oil to the same pan and add the diced potatoes.
Cook the potatoes on medium-high heat, stirring every minute, until golden brown and tender (about 20 minutes).
Return the cooked turkey and onions to the pan with the potatoes.
Season with salt, black pepper, and oregano. Stir everything together until well combined.
