These flavorful turkey enchiladas are packed with seasoned ground turkey, onions, spices, and green peas, all wrapped in corn tortillas and topped with a rich tomato sauce and melted cheese. Heat the oil in a large non-stick frying pan over medium-high heat. Add chopped onion and ground turkey. Cook, stirring occasionally, for about 7 minutes, or until the turkey is no longer pink.
Add the green peas, cumin, chili powder, and minced garlic to the pan. Cook for 2 more minutes, stirring well.
Stir in the chopped cilantro and 1/2 cup of shredded cheese. Remove from heat.
In a bowl, mix the tomato sauce with about 1/2 cup of water (using the empty tomato sauce can to measure).
Pour 1/2 cup of the tomato sauce mixture into the bottom of an 8×12 baking dish.
Heat corn tortillas in the microwave (about 3 at a time) for 20 seconds to make them pliable.
Divide the turkey mixture evenly between the 12 tortillas. Roll each tortilla and place it seam side down in the baking dish.
Pour the remaining tomato sauce over the top of the enchiladas. Sprinkle with the remaining shredded cheese.
Bake the enchiladas in the preheated oven for 30 minutes, until the cheese is melted and bubbly.
