This Instant Pot Kalua Pulled Pork cooks up tender and flavorful. Add a dash of liquid smoke and pressure cook for an easy dinner that's great over rice.
Start by prepping the instant pot and pour one cup of water in it. This helps the appliance to cook properly.
Now it's time to season the pork. Lay it out on a preparation surface and drizzle with liquid smoke. Sprinkle on salt, pepper, and garlic powder. Rub seasonings onto meat. Then flip roast over and season again. Rub in seasonings on all sides to coat.
Add pork to trivet (if using one) or straight in the water of the instant pot.
Close the pressure cooker and turn the valve to sealing. Press the "pressure cook" button and set the time to 90 minutes at high pressure.
Once the 90 minutes are up, allow the steam to naturally release for 20 minutes. After that, turn the valve and quick release any remaining steam. The pin will drop and then it's time to open the instant pot.
Remove trivet and/or cooked pork shoulder and place meat in bowl. Use two forks to shred the meat. It will be very tender. Feel free to add any broth from the instant pot, incorporating 1/4 cup at a time. Once the meat is shredded and mixed with the broth, it's ready!
