Mexican Pickled Red Onions
These Mexican Pickled Red Onions are a deliciously crunchy topping for salads, dips, stir fry's, and so much more. The longer this dish marinates, the more flavorful it becomes!

red onions

limes
washed

vinegar

Instructions
Start out by peeling and slicing the red onions. Chop off the ends, peel off the outer layer, and cut the onion in half. Then chop into thin slices.
Add the onions to a medium-sized bowl.
Slice limes into quarters.
Then squeeze each lime wedge over the onion slices.
Next add your seasonings: vinegar, salt, and pepper.
Use a big spoon to mix all the ingredients and coat onions in seasonings.
Place bowl in fridge to marinate for one hour before serving.

You can use white or red wine vinegar for this dish
Minimum time in the fridge is 1 hour, ideally the onions will marinate overnight
