These Purple Potatoes In The Air Fryer are so unique-looking and tasty! They cook up crisp and flavorful. Just chop and add seasonings for a one-of-a-kind side dish.
Start by cutting the potatoes into uniform pieces. If they are small, you can leave them as is. With larger potatoes, you'll want to cut them in half or quarters so that they cook more evenly in the air fryer.
Add potatoes to a mixing bowl and drizzle with olive oil. Top with seasonings. Use a spoon to toss potatoes in oil and seasonings to ensure all pieces are well coated.
Place potatoes into air fryer basket and heat to 400 degrees for 20 minutes. Halfway through cooking time, remove air fryer basket and shake potatoes to help them cook more evenly.
After cooking time is up, pierce potatoes with a fork to ensure that they are tender to your liking. If not, replace basket in air fryer and cook for another 5 minutes.
Once potatoes are done cooking, remove from air fryer basket with a spatula and place on a serving plate.

Notes
Use any kind of cooking oil or omit if you prefer (it does make the potatoes crispier)
