These healthy Raisin Bran Muffins are a delicious and nutritious breakfast or snack. Made with Raisin Bran cereal, they bake up golden brown with the perfect texture.
Start by mixing the cereal and milk together in a mixing bowl. While you wait for the cereal to soften, preheat your oven to 350 degrees. Add paper liners to a 12 cup muffin tin.
Add eggs and vegetable oil to mixing bowl. Stir until combined.
Add sugar and stir again.
Pour in flour, cinnamon, baking powder, and salt. Mix until combined.
Using a spoon, add batter to each of the muffin cups, filling them about 3/4 full.
Bake for 30 minutes.
Allow to cool for 10 minutes and serve.

The cereal needs to soak in the milk for a few minutes and get a bit soggy to mix properly with the other ingredients.
In lieu of vegetable oil, you can use melted butter or coconut oil
