Roasting leeks makes them tender, caramelized, and delicious! This recipe for Roasted Leeks is perfect for a healthy side dish that's bursting with flavor.
Start by preheating the oven to 425 degrees and prepping a baking sheet with parchment paper.
Wash the leeks and chop off the dark green section. Slice the white part of the leek in half width-wise and then again length-wise, to make 4 halves (see photo).
Lay out leeks on parchment paper atop baking sheets. Brush with oil using a pastry brush. Sprinkle on salt and pepper.
Cook for 25 minutes or until the leeks are perfectly roasted with gold brown edges.

Be sure to wash the leeks thoroughly as they can have dirt or debris in between the layers
