Instructions
Preheat the oven to 425F. Line a baking sheet with parchment paper.
Peel the opo squash with a vegetable peeler and cut it into 1-inch cubes with a sharp knife.
Toss the opo squash cubes with olive oil and cinnamon, then put them on a baking sheet in a single layer.
Bake opo squash cubes for 25 minutes, or until tender and golden brown.
