Spring Roll In A Bowl is a healthy meal or side dish that's bursting with flavor. This recipe is so much easier than traditional spring rolls, and you get to enjoy all the same ingredients and seasonings.

To prep the rice noodles: add rice noodles to a pot of boiling water, turn off the heat, and let the noodles soak for 5 minutes. Then drain the noodles and rinse the noodles in cold water.
Add 2 cups of cooked rice noodles to a big bowl.
Then toss a bag of (pre-washed) coleslaw mix on top.
Chop imitation crab sticks into pieces, then add to the bowl. (You could also use small, cooked shrimp if you prefer.)
In a glass measuring cup, combine olive oil, soy sauce, rice vinegar, and pepper with a whisk.
Pour dressing over the salad and toss to coat salad completely.
At this point, try the salad and add any more seasonings to your taste.
