Add a drizzle of olive oil to a frying pan and heat the pan to high.
Start making the sauce. Pour soy sauce, mirin, and rice vinegar into a glass measuring cup. Add brown sugar and cornstarch, then whisk the ingredients until combined.
Add the shrimp to the pan, using a spatula to arrange the shrimp in a single layer for more even cooking.
Cook shrimp for about 2 minutes (stirring every minute) until the shrimp becomes pink and is almost totally opaque.
At this point, add the sauce and wait for it to come to a boil. This will take about a minute. The sauce will thicken and the shrimp will be completely cooked through.
Turn off the heat on the pan and move the shrimp and sauce to a serving bowl or plate.
Only a little bit (1 teaspoon) of oil is needed for cooking, especially if you are using a nonstick pan.
This recipe works with raw or thawed/pre-cooked shrimp. If using raw shrimp, follow the instructions above for cooking the shrimp first. If you have thawed, already-cooked shrimp, you can add the shrimp and the sauce to the pan at the same time.
